I've had a good creative week, but it is so so hot, and I am so weary all the time.
I must tell you that I have had a wonderful present on Friday, a new laptop, my very lovely husband takes care of someones garden, well, just cutting the grass, whilst they live in the UK, he surprised me by asking a friend to buy the computer from England and he then paid for it with his gardening wages that he had saved, I'm thrilled with it, but as you know it takes time for me to get the hang of modern things, so am spending a lot of play time on it. I still haven't found the photo gallery so that's why there are no pics at the moment.
My daughter is here this weekend so I will have her show me what I have to do. I know I'm a bit dibby but these days there isn't even an instruction book, at least in the old days I was much better at following instructions via a manual. Oh well, I will catch up with everyone later, I'm just about to make some apricot chutney while there's a bit of breeze coming in from the sea.
I thought Id published the post above but obviously I didn't, anyway I have now finished making the apricot chutney, it's delicious,very very spicy(hot) but that's how we like it I just put more chilies in, but so easy to make too,
3 1/2 cups of apricots
1/2 cup sugar pref.brown but today I used white
1 chopped onion
1/4 cup of raisins
1/3 cup of wine vinegar
1 chili or more depending on your taste I used 2 and the seeds
1teaspoon of salt
1/2 teaspoon mustard seed
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon pepper
Place everything in a pressure cooker and cook for 15 minutes, if you haven't a pressure cooker bring to boil and simmer everything until soft and sticky
Uncover and fast boil until thick. This keeps well in the refrigerator Im not sure how long it would keep as we never have it long enough
